Here we have it, the product of much fine tuning and experimentation, but this one is a showstopper!

It's only taken 5 or so years to get this consistently right!

Fermented green hot sauce , infused with 12-year-old @caolila.distillery whisky, 4 months in the making, using the @eliefs.com.official onggi

We only made about 1.5 litres this time around and allowed to cold ferment for much longer.

I always say a good bbq is nothing without the side dishes, and nothing is as satisfying as finishing your hard work with all the small finishing touches.

Gotta make this last now as I'm waiting on this years crop for the next bottling. The next batch is red pepper!

Throwback today;
Dug out my old cooking diaries and had a play in the kitchen.

I learnt to make Momo some 17 years ago, when I was lucky enough to train intensively with a local Nepalese restaurant owner in Darjeeling.

This was a recipe that was hammered into me, although I'm a bit rusty with the presentation!

I'm going to rummage through those old note books now and see what else I can whip up! Can't believe I've left these untouched for so long!

Also, Bonus picture of me teaching a few dozen of my students the hokey-cokey at the end.

I caught up with some old colleagues and friends not long ago, who I had not seen in a long, long time - it was as if only days had passed and it reminded me of some of the things I had recently been missing.

They asked what I had been doing with myself, I hadn't posted or spoken at any gigs lately

Well, With the pandemics in the past and the turbulent few years we've had, throwing in my ever growing family I took a step away from most public facing work and focused on my family life and haven't taught a face to face course in the fitness industry for a long time.

I've still maintained a collection of private clients, I've worked on some small projects in the background and kept up with my hobbies and my training but largely I've been off the radar, just building a richer life.

Time has flown, since my first job in a gym about 20 years ago and I've seen a lot, learnt a lot and tried and tested an awful lot too.
I've only been truly committed to coaching and teaching for about 15 years now and coaching online almost exclusively for 13 of those years

I've been awful at my job, great at my job, bored of my job, downright sick of my job, I've spiraled into deep depression because of my job and I've lost and gained an awful lot because of it too, but ultimately, I do love every aspect of working with people within the food, fitness & health industry.

And now, finally, I'm coaching & tutoring and taking clients again publicly.

Working on a gig that needed me to brush up on my shucking skills recently.

So I made this super simple, awesomely tasty oyster stew, with a fiery peppery kick and plenty of sweet paprika.

It was 👌 with a few chunks of thick bread and butter.

Oysters are still super affordable and super nutritious, so I was very happy to have loads spare

Definitely need some tips on my seafood prep though @michelnijsten , or some of your sourdough for dipping in the next batch

This one deserved it's own post.

Took 3.5kg of bone in beef shin from @perrysofeccleshall after my last @perrysfieldtofork burger making course

Seasoned it up with a beautiful rub I've been working on...(it's a secret)

Smoked it for around 5 hours, next to 2kg of garlic, green tomatillos and onions, that were sizzling over the firebox exit, then panned it all up in a big old, heavy cast iron pot and left it to keep going over embers for another 8 or so hours, maybe more.

Added in mixed beans, served with rice , seasoned with light spices and enjoyed for lunch the next day 👌

Need to stop training with people who have bigger calves than me, it's just embarrassing.

Today Theo was working on a bit of volume for his lifts after spending all week maxing out and hitting gnarly PBS. h/He's a good little gym rat but gets pretty cranky if he doesn't get his post workout nap. (FAO: Parent Police - Jokes)

Sun was out and he didn't want to nap so we had a but of fun in the sun

Working on perfecting my BBQ wings & Buffalo sauce recipes.

Hide the wings at the back of the smoker whilst your working on the main cuts, after you've left them brined and in a spice rub, then after a few hours, toss them into a special mix to make sure they crisp up and move them into the direct heat alby the firebox of the smoker whilst we're working on other stuff means we've got an awesome snack for lunch all ready 👌

Trigger Warning: Parenting.

Friday, Alexa came home feeling low. She had been making a Mothering Sunday card in school.

Alexa is still young, she has a huge extended family with multiple carers, step-everythings, half brothers, sisters and much more.

She doesn't really understand what all those things mean, they're just her family members to her and we co-parent between biological and step-parents

In school she wanted to make TWO cards for mother's Day - A card for, her biological mother, the mother of the five children we have in this home and for her step-mother. The mother to her & her half brother and every child in their home.

Nope.

Her teacher told her she was "only allowed to make a card for "your (her) REAL mother, the mother who gave birth to you (her)"
This upset her.

--well shit, that's just opened a can of worms now hasn't it--

What were the foster children allowed to do?
What did the children who had no contact with their mothers make?
What about the child born into the family with two mums?
What did the child who is being brought up by their grandparents do?
How did they handle the child who lost their mother recently?

Alexa is crazy lucky to have such a huge loving family and to be lucky enough to be in a situation where she doesn't even know any better than to use labels besides "parents" whilst she's still a child.

It's actually not sat well with myself or Jen at all and we've dropped the school an email to discuss this a little further on both the policy and choice of language used here.

There's a time to teach a child about genetics, inheritance and proper terminology, then there's a time to have a child make a card to give to whoever the hell they identify as their providing their 'mothering' care, even if that means there's two of them or more.

Is 'Mothering Sunday' only for biological mums?
or are we kind of past that in a day and age where families and identities are so interwoven and interchangeable and personal that the notion that celebrating anything should really just be grounded in loving, acceptance and understanding.

What do you guys think?

The samples have cured and hung and this morning I get to taste test!

Paprika, garlic, oregano, cumin, coriander and clove is a clear winner - it is now destined for the Christmas dinner.

We've got a full house today covering prep, portioning, jointing, seasoning, cooking, flavour science, calorie control and of course, BBQing out in the sun!

Were going to be playing with whole chickens as students learn to joint, season, brine and portion them aswell as some amazing brisket mince, marrow and marrowbone and local breads for the burgers, along with slaws and other salads

If this doesn't perfectly sum up the not-so-instagram perfect life we all lead.

It's been 3 nights since I had more than an hour of unbroken sleep, the babies are going through a leap again.

Their little brains struggle to shut off as it's flooded with new skills, knowledge and ideas every day

The one that will sleep, sleeps starfished in the middle of the bed, because that's what works, or else her brother climbes all over her in the night... But she will be sad about something in an hour or so and need a cuddle.

We should probably get the second cot out, but we need to get another base for it and were both pretty tired - people will tell us we shouldn't co-sleep, or have toys in their cot, but it's what's working.

The other one, he turns into a human tornado once his back hits a mattress, so I've soothed him with books, dragging his naked arse around the floor and a bottle curled up at the foot of the bed, where he snuggles and sleeps and dad sleeps too from sheer exhaustion of it all.

For everyone you meet that says 'oh mine slept through from day one' - they probably aren't remembering it right and for everyone one that is, there's a dozen more who don't want to admit to finding it hard.

We've been out today and people have told me how nice it is I'm out with them, asking if mums having some time off whilst I babysit - don't get me started... 🤣

It's tough being a parent, really tough.

But it's pretty cool too

So next time you as a parent feel overwhelmed, or are tempted to Google 'how long should my 9month old sleep per night)

Just remember that it will all pass and aslong as they're happy, healthy and not too messed up by the time they are grown, you've done a great job.

So to all my imperfect parental buds out their, regardless of if your achievement is raising a pup that has learnt to not shit all over the rug and piss on visitors (good habits for kids too) or you're raising a human that will someday pay into the system to ensure I can get my knees replaced when I'm old, no matter how shit you're doing today - I think you're doing pretty okay.

Happy whatever, every day is an adventure.

This was absolutely the most enjoyable production I've been on, although my American accent clearly needs work 😬
The crew were amazingly warm, even though I was purely there to ham everything up, also this time it didn't involve me getting repeatedly trampled by horses this time, and I got to eat at the craft van. 🏋️win.
